These seasoned meats will pair very nicely with a glass of Ilsley Vineyards Cabernet Sauvignon.

Coco-Cafe Rub

Servings 0.5 cups

Ingredients

  • 1/4 cup ground bittersweet cocoa
  • 1/4 cup ground ancho chili
  • ¼ cup fine ground instant espresso
  • 6 Tbsp. brown sugar
  • 2 Tbsp. paprika
  • 1 Tbsp. dry English mustard
  • 3 Tbsp. ground cinnamon
  • 2 Tsp ground nutmeg
  • 1 Tsp ground coriander
  • 2 Tsp ground ginger
  • 1 Tbsp. kosher salt
  • 1 Tbsp. allspice

Instructions

  • Mix all ingredients until well combined.

Generously rub this flavorful seasoning on any of the following meats:

  • flank steak before grilling or searing
  • pre-boiled ribs before baking or grilling and before adding BBQ sauce
  • rib eye or New York steak and sear in a cast iron skillet
  • pork loin before roasting or chops to grilled
