These seasoned meats will pair very nicely with a glass of Ilsley Vineyards Cabernet Sauvignon.
Coco-Cafe Rub
Servings 0.5 cups
Ingredients
- 1/4 cup ground bittersweet cocoa
- 1/4 cup ground ancho chili
- ¼ cup fine ground instant espresso
- 6 Tbsp. brown sugar
- 2 Tbsp. paprika
- 1 Tbsp. dry English mustard
- 3 Tbsp. ground cinnamon
- 2 Tsp ground nutmeg
- 1 Tsp ground coriander
- 2 Tsp ground ginger
- 1 Tbsp. kosher salt
- 1 Tbsp. allspice
Instructions
- Mix all ingredients until well combined.
Generously rub this flavorful seasoning on any of the following meats:
- flank steak before grilling or searing
- pre-boiled ribs before baking or grilling and before adding BBQ sauce
- rib eye or New York steak and sear in a cast iron skillet
- pork loin before roasting or chops to grilled
